Las Vegas Restaurants
Since we have been on the subject of Las Vegas lately (and there has been a lot of good hotel feedback), I wanted to see if anyone had any restaurant recommendations (preferably on the strip).
We're heading out there for a few days next month. We'll probably eat "Boglehead style" most of the time we're there, but would like to also go for a couple of nice meals.

I lived in Las Vegas for years. There's so many restaurants on or near the strip that it would help immensely if you gave a style and/or price range of restaurants.
Off the top of my head, a few of my favorites:
Pricier
Strip Steak (Mandalay Bay) - my personal favorite restaurant in Vegas
Prime (Bellagio)
Mid-tier
Wynn Buffet
Michael Mina (Bellagio)
Cheaper (for the strip, at least)
Hash House A Go Go (LINQ)
Burger Bar (Mandalay Bay)
Grand Lux Cafe (Venetian/Palazzo)
Off-strip, reasonably priced
Lotus of Siam
Fat Greek
Off the top of my head, a few of my favorites:

We like going out to breakfast:
Cosmo buffet is off the chart! Don't eat for 24 hours beforehand. Lol.
Mon Ami Gabi at Paris - great french toast.
Peppermill - just past the Wynn - HUGE pancakes and huge breakfast drinks for those that need a bloody in the AM.
Cabana Grill at MGM pool area - food is not great but it's fun being right in the middle of the action.
For other meals we are moderate priced people. Some places we like:
Border Grill for Mexican - Casesars Forum Shops or Mandalay Bay.
Secret Pizza at Cosmo (you got to find it).
Tiki Room - downtown.
Joe's Stone crab - more expensive "fancy" dinner but not crazy priced.

Not on the strip, but Binion's Ranch is like stepping back in time. Steak is very decent, service & price is good and it's like stepping back into 1964. Excellent views as it's the top floor of Binion's casino with booths up against the windows on all sides. Finding it is an adventure in itself - you owe it to yourself to go there if you like a steak dinner. It really is a time warp.

La Cave at Wynn is another place we like to hit - nice outdoor seating.

Craftsteak at MGM has been my favorite steak in Las Vegas but it's loud. Aureole in Mandalay for seafood, and that's quiet.
Don't let anyone come on this thread and suggest In N Out which looks from the hotels like it's close but actually a solid 15 minute walk from Las Vegas Boulevard, and also not good.

Everything tastes good at 4:00 am after drinking all night.
I seem to remember some place downtown advertising a 16 ounce ham steak breakfast as a "Pound of Pig" special.

Avoid Trevi at Cesar’s forum shoppe. It used to be our favorite stops. But it was the worst food we have had in a long time (anywhere not only Vegas) when we went there in February. Food was so stale and tasteless we had to send it back twice and had to speak with management and to was still bad after that conversation. And we are not fussy people at all.

Le Thai (Fremont St). Just an ordinary Thai place, but the food was really, really good.

I've heard great things about the southern fare and friend chicken at Yardbird at the Venetian.
And I can attest that the sushi at Yellowtail at the Bellagio is phenomenal (albeit pricey, but that's pretty much par for the course in Vegas these days)

This is an excellent Thai restaurant but be forewarned that the wait times can be fully absurd (2 hours+). I "waited" almost 3 once, which entailed taking a cab elsewhere to have drinks and then returning. I suggest dining here outside normal hours for a great meal that doesn't make you angry in the process.
Another good place is Sushi Samba (it is loud but the food is good):

I like to find less 'commercialized' places in Vegas.
It's off the strip, but check out Piero's. It's an old school Italian place. If you've ever seen the movie "Casino", this was where they filmed the scenes for the restaurant owned by Joe Pesci's character. I went there because of that and go back because it's really good!
Also, a less pricey option is Battista's that is behind the Flamingo. It's been at the same location since 1970 and house wine is included with the meal. I had the chicken parm and it was awesome.

Vegas local here. For those voting for Lotus of Siam, check out Chada Thai & Wine. The owner was the former wine sommelier at Lotus and IMO it is better than Lotus overall, a lot of other locals share the same opinion. Lotus is amazing, no doubt, but you can go to Chada without the wait and it's a little cheaper. Waiting 2 hours for any restaurants kind of sucks. You can eat like a king at Chada for $30-50/person, most dishes are $8-20.
Thai - Chada, Lotus of Siam
Sushi - Sushi Hiroyoshi, Kabuto. If you want all-you-can-eat, Goyemon.
Steak - Delmonico, Cut
Downtown - Kitchen at Atomic, Eureka, Carson Kitchen

That's the place. It was kind of like a strip mall plaza with the parking lot in the center. The last couple of times we went we were accosted in the parking lot by a panhandler. Some of my favorites, off the top of my head, your mileage may vary:
For the most dangerous milkshake you could ever desire, try the "Super Nova" monster milkshakes at Cafe Hollywood, inside Planet Hollywood. DW had one there a couple weeks ago, the menu called it a "Chocolate Comet Super Nova", the waiter called it a "diabetes milkshake". It probably should have been registered as a weapon of (body) mass destruction.
As I was typing this, I went to MGM Grand's website to look up the name of my favorite LV stir-fry restaurant (Grand Wok), only to find that it closed earlier this year after 19 years in business.
- Jimmy Buffett's Margaritaville, northwest corner of Flamingo (good burgers and tropical beverages)
- Joe's Seafood, Prime Steak, and Stone Crab, at Caesar's Palace (take a large party)
- Burger Brasserie, in the connecting walkway between Bally's and Paris (snacks, drinks, sandwiches, sort of a French-themed sports bar)
- Le Village breakfast buffet, inside Paris (IMHO better than most of the "buffets" in LV; stay away from the buffet in MGM Grand)
- Battista's Hole-In-The-Wall Italian Restaurant, behind The LINQ (old-style family-run Italian restaurant, your choice of bottomless glasses of house red or white wine included)

So many good places! These are the ones that I always seem to remember:
Eggslut at the Cosmopolitan for breakfast. Don't let the name offend you; the egg sandwiches are fantastic. The line is always long though but it's worth it.
Wicked Spoon buffet at the Cosmopolitan. So much food to choose from and it is all delicious! Go hungry!
Yardbird at the Palazzo/Venetian. Chicken and waffles... Enough said. They had a really good Bourbon cocktail there too. I can't remember the name but it was served in a mason jar.
I wouldn't consider any of the above super expensive either.
If you have vegan and/or vegetarians eating with you, all the restaurants at the Wynn have special menus for them. I would assume they're still providing those options even though Mr. Wynn is no longer in charge (he's vegetarian apparently).

We like to try all kinds of off-strip places and are relatively frugal. We always go to the Egg-and-I which is great, especially if you like breakfast food. Waits can be sort of long on the weekends. They have several locations though we typically go to the one on Sahara. If you like buffets, the buffet at the Orleans Casino is pretty good for the price ($12-$15 or so).

Didn’t care for Joel Robuchon, to be fair I’m not a fan of the French cuisine, but the misses loved it. Nobu in Caesar's is my go-to favorite.

These are great! With all of these suggestions, it looks like we will be good for the whole time we're there. The restaurant recommendations I received from Bogleheads for a previous vacation didn't disappoint, so I'm looking forward to trying some of these.
