XBOX 1

I know nothing about the XBOX.

One of the wishes for the holidays from a foster child is either a XBOX 1 headphone or XBOX 1 controller.

Is the interface different for the XBOX 1 vs other XBOXs?

Yes, those will work. Try searching Xbox One for better results. Xbox One is the prior generation system so if you look elsewhere just make sure what you buy is compatible.

Do I have worry about a headset or controller not working for the XBOX One?
Or did Microsoft make it so that they are interchangeable?

If you buy a Microsoft branded product it will most likely work. If you buy a 3rd party product, you'll need to read the description.

The products you listed state they support Xbox One:

Generally, Microsoft's official XBox gear is good quality, so you're wise to stick with them. Third party gear is much more variable--some is great, some is not great.

You can throw in a Xbox gift card too so they can get a game or some downloadable content…
