What to do with canned chicken?

I have a relative who panicked when Covid-19 hit and started buying up cases of Kirkland canned chicken at Costco.

She's now wondering what to do with all that canned chicken other than mixing it with mayo and eating it as a sandwich. She said she's going to donate some to her local food pantry, but do you have any recipes to use it up?

It's a lot more versatile than canned tuna (we have a bunch of both). I eat it straight of the can, but I suspect (although not ideal) that it would be perfectly fine in any recipe where you would normally use chicken breasts or thighs.

Its a pretty good sub-in when you'd otherwise use already cooked chicken. i.e. tacos, burritos, fried rice, chicken pot pie, etc. Isn't one of the reasons to have canned chicken in the pantry is to use if you can't get it fresh?

It's great in Chicken vegetable soup - celery, carrots, onions. Even my fussy teen agreed this knocks canned soup out of the park!

I put pouched chicken chunks in any vegetarian recipe or any burrito or taco that calls for hamburger. Fajitas, teriyaki, fried rice, lentils, pad thai, thai chicken with basil, basically ANYTHING.

One doesn't need any recipes for any of this. Just add the chicken to everything except perhaps sweets.

We do exactly this ^ plus some of what Livesoft said. It is good for soups too like chicken wild rice soup.

Oh and also what helps go through a surplus like OP’s relative has, is having a teenaged son who eats like a maniac (and burns it all off through exercise ) so that the volume of all of the above cooked dishes/soups is triple the size of a regular family meal :mrgreen:

Warm it in a sauce pan with bbq sauce. Good on a plate with side dishes or makes a great sandwich on a bun.

Canned chicken will likely stay good for over 5 years.
I would be in no rush to get rid of it.

Things I do with canned chicken: mix it into pasta sauce for a protein source, put it on a salad for a protein source, use it in a quick casserole, make chicken & dumplings, cook up a quick soup/stew (no veggies or precooked veggies), and many other recipes that call for cooked chicken.

take the costco canned chicken, as well as one of the costco avocados now ripened
Toast two corn tortillas with one slice pepper jack on each.
once toasted and melted, add a layer of mashed avocado mixed with salsa (quick and easy guac), then beans &/or canned chicken. Top with lettuce.

Voila - chicken tostadas (or tacos) and a quick and tasty lunch.

Yep, good soup and chicken salad, too (curried, especially).

1/4 cup candied pecans chopped fine- Trader Joe's
Mayo

Best chicken salad for sandwiches and salads

Add celery if you have it.

Have made chicken curry and chicken Korma with canned chicken from Sam's, comes out good. I like the bbq chicken ideas too. None of these has to be too spicy though they can be made so, but if you want spicy there are more Thai and Indian dishes available.

Chicken/Tuna Melts. Toast a few split English Muffins halves. Mix chicken with mayo and other things (onion, pickles, relish, peppers, etc), cover with cheese, bake until cheese melts. (Can also use pizza sauce for pizza melts). Great app for a toaster oven. Was a staple in college.

Stuffed dishes. Calzones, strombolis, empanadas, etc... Basically make/buy some flour crust, fill with chicken & vegetables/spices/sauces/cheeses, roll/fold, bake. When done, eat the entire thing yourself, or slice into appetizer pieces for a get together.

Stir frys. Self explanatory. Serve over rice or with naan/tortillas.

"Game day" dips.

"Protein" omelets.

Burritos/wraps.

Pizza.

Subs/heros/sandwiches.

Jambalaya/gumbo.

We use the stuff often enough. Very versatile.

I’d buy a couple more cases and drop them all off at the food pantry. I was at our local one yesterday and they can use all the protein products you can find (peanut butter, tuna).

I'd probably put a can under each one of my desk's legs in order to raise it up and try not to hunch as much. That and using one to prop a door open.

I mix with instant ramen - boil water, add instant ramen and seasoning. Can also add fresh/canned/frozen veggie of your choice. While ramen and veggies are cooking, open can of chicken (this stuff is pre-cooked by the way), drain, and add the chicken to a bowl. Pour piping hot ramen and soup into the bowl over the chicken and mix gently to get the chicken pieces out from the bottom. I actually think it is quite good!

Agreed. There are lots of things to do with canned chicken, and you may regret not having a handy shelf-stable protein source later this year.

I've noticed that after weeks of quite barren shelves in the meat department Safeway is starting to have more selection recently.

Tortilla soup. Swap out canned goods using a 6can tortilla soup recipe.

Broth, chicken, black beans, corn, tomatoes/chilies, jalapeños. Season with red pepper, cumin and garlic as desired.

Sprinkle cheese on top, a little cilantro or sour cream as desired, and crumble Tortilla chips.

When this first started, I was able to order groceries every two weeks and I'd get two 2-lb packages of fresh chicken to last that time frame. There was no problem getting the chicken with the first few orders. With my last two grocery orders, I've only received 1 package of fresh chicken, when I'd requested 4 packages (2 with each order). I've had to move to weekly orders just to try to get more fresh chicken, which netted me 1 more package last weekend. We'll see what I actually get in this weekend's order tomorrow.

I was fully expecting this once I saw all those news stories about meat packing plants. I'm sure that prompted people to panic buy as much fresh meat as the stores would allow them to buy. Combine panic buying with decreased production and we have another toilet paper situation on our hands. I'm glad to see stores are limiting meat purchases to try to stave off the panic buying. I also hope the people who panic bought have sufficient freezer space so the meat they bought doesn't go to waste.

Another thought, consider donating cash to food banks instead of running out to buy food to donate to them. While food banks will make use of donated food, food banks have a lot more buying power than the individual. Buying by the pallet is a lot more cost-effective than buying by the box. So if you want to donate but don't have any spare food on-hand, go to their donation website instead. And if the food bank has excess inventory at the moment, they can hold on to the cash for when they have low inventory in the future.

They should stack it in their basement beside the ammo.
Understand that choosing an HDHP is very much a "red pill" approach. Most would rather pay higher premiums for a $20 copay per visit. They will think you weird for choosing an HSA.
