Homemade Salad Dressing

Anyone else here have a preference for homemade salad dressing over store bought or brand name salad dressing? I’ve been making my own for a few years now, one serving at a time. Every time it’s a bit different adding great variety.

For example this evening I mixed in a teacup to pour over a salad vinegar, soy sauce, olive oil, Bragg Organic Sprinkle Seasoning, and Kirkland Organic No-Salt Seasoning.

I also often use other ingredients like salsa, relish, hot sauce, or mayonnaise.

Anyone else?

Nutritional yeast, olive oil, garlic, lemon juice, black pepper, pinch of salt. Better than any store-bought salad dressing.

Since living in Italy we have just gone with olive oil, balsamic vinegar, salt, and pepper.

This thread wins for the shelter-in-place distraction award! I hope we see more replies.

My only homemade salad dressing is when I make Chinese Chicken Salad. What I usually do is take an off-the-shelf Asian salad dressing of some type, and then add plum sauce, fresh grated ginger and some orange juice. We serve often on pool night at our HOA pool, and everyone raves about it.

Well, I also have an old world Italian tomato salad dressing, which is just olive oil, red wine vinegar, and salt/pepper, but maybe too simple?

99% of the salad dressing I have ever used is home made. Simple ones are the best. It's like mayo or sandwiches, why would you buy something like that when for sure it will be worse at it is trivial to make?

Most homemade either lack in the "wow" factor or are a PITA to make. The only two I make anymore:

Honey mustard. Can't get any simpler than that.
or
Vidalia onion dressing. Basically toss a sweet onion, vinegar, oil, and spices into a blender.

I like a good vinagrette - easy to make. My favorite but very favorite dressing is store bought - Marzetti’s blue cheese dressing which needs a good hearty lettuce. It’s great as a dip too.

Extra Virgin (who are they?) Olive Oil
Powdered Onion
Salt
Pepper
Italian Seasoning
Lemon Juice

Blend and refrigerate.

I much prefer homemade dressing. It’s healthier and cheaper. I buy local flavored olive oils and vinegars to make. Generally 2 parts vinegar to 1 part olive oil. I put in a small sealed container and shake. If I don’t want it to separate quickly, I add a bit of mustard as an emulsifier.

Olive oil.
White wine vinegar or white balsamic.
Sea salt.
Fresh ground pepper.
Dijon mustard.
Minced shallot.

I like the lemon juice and honey mustard ideas! Will have to try as soon as I risk my life to get more lettuce!!!

Whole milk plain yogurt (prefer the Icelandic style skyr), yogurt seasoning riata mix, thin with buttermilk

Eggless Caesar

1 clove garlic
1/2 tsp salt
Juice of 1 lemon, yes fresh (only) - better with Meyer Lemons
1 tsp Dijon
1 tsp worsteshire
1/4 - 1/3 c olive oil, depends how much lemon juice you got.
1/2 tsp fresh ground black pepper

1. Crush garlic in a garlic press into a small mixing bowl
2. Add salt and mash into paste, let sit for 3 mins
3. Add lemon juice and mix
4. Add worsteshire and Dijon and mix well with a whisk
5. Slowly drizzle oil and whisk to mix
6. Add back pepper and toss with greens

Add parmigiana if you wish.

No more dressings with MSG, etc additives once you make this.

Olive oil, rice vinegar or white wine vinegar, a splash of lemon juice, sea salt, crushed rosemary.

At this point, I do NOT make my own salad dressing as I found that generally, it was more expensive than the deals that I could get on excellent quality commercially produced ones.

Having said that, I have some dressing mixes that I was given from Penzey's that I would love to get out of my pantry. I will try to get those used in the coming months

I sprinkle/pour olive oil and balsamic directly on the salad and follow with ground pepper. It only takes a few seconds as I have the olive oil (in a dark bottle with a booze filler spout), balsamic vinegar, and pepper (in an old manual coffee grinder) on the countertop. My wife likes salt, but I don't so she adds it on her plate.

If I'm feeling fancy, I'll put the above in a small jar and add something like crushed raspberries and shake to emulsify.

Sprinkle on lime juice + grated Parmesan cheese.

May have to try some of these other ideas.

Because my spouse makes all our salads, I by default mostly eat the dressing she makes to put on it which varies all the time. However when I go out to eat, I always order my salad with Ranch. Occasionally if I'm eating a salad at home that I make, I pull out an ancient bottle of Dorothy Lynch dressing which is my favorite.

Plum sauce and hoisin are different things.

I make my own sometimes, the typical vinaigrette. If I am making an Asian inspired salad, I add soy sauce, ginger and a touch of sugar.

Mostly I use Newman's Own dressings.

We don't make a ton of salads, but we never use store bought dressing because they typically get thrown out expired. I mix the homemade dressing by shaking in a small tupperware container or by blending in the smoothie cup for my blender. There are millions of combinations to add to olive oil or vegetable oil: balsamic vinegar, red wine vinegar, champagne vinegar, soy sauce, fish sauce, honey, agave, dijon mustard, whole grain mustard, miso, shallot, anchovies, garlic, ginger, red onion, lemon juice, orange juice, lime juice, sesame oil, egg yolk and those are just off the top of my head.

I’m not as fond of olive oil as others (long story involving hot dogs cooked in olive oil when I was a youngster that ruined olive oil for me), but I prefer to make my own salad dressing with avocado oil, various vinegars, and often some mustard. I just shake it and pour it.

Avocado oil is also good for cooking.
I get the FI part but not the RE part of FIRE.

i drizzle a 25 yr aged balsamic from Claudio's in South Philly (link below) and some high quality olive oil. No need to even mix them.

Jane Esselstyn 3-2-1 Salad Dressing

3 tbsp balsamic vinegar
2 tbsp dijon mustard
1 tbsp maple syrup (or agave, etc)

Use 3-2-1 ratio for other quantities, try other types of vinegar, mustard, etc.

3 T. Balsamic vinegar
2 T. Dijon mustard
1 T. Maple Syrup
1 T. Soy sauce
1 clove Garlic minced
2 T. Water
1/2 t. Italian herbs dried, crushed with your fingers
Salt
Pepper

Dorothy Lynch dressing
This is one of my favorite dressings, and it is the best dressing to use in taco salad. The original dressing was made in St. Paul, Nebraska and was sold in the midwest
but was becoming hard to find in California so I began making my own...years ago This recipe is very similar to the store version.


1 can Tomato Soup
3/4 cup sugar - I use brown
1 cup oil -I use olive oil
1/2 cup apple cider vinegar
1 t. sea salt
1/4 t. garlic powder
1 t. celery seed
1/2 t. black pepper

Place all of the ingredients in a blender or food processor and mix until all is combined and creamy.
This keeps in the refrigerator for several weeks.

You can take a kid out of the trailer park, but you can't take the trailer park out of him... Huge glob of mayo, smaller glob of ketchup, big spoon full of relish, and a nice squeeze of Srichaca. It's like a slightly spicy version of secret sauce. The upscale folks I've met call it thousand island.. Fantasy Island? I dunno. I even save it and use it for sandwich spread.

DW thinks this recipe is "gross".
Someone made it for me when I was in Japan long ago.

Mayonaise
Soyu (high quality)
Blend and dilute as needed.

I have never heard of this recipe before and since.

I often make my own vinaigrette

4 Tb Oil (usually EV Olive, but sometimes toasted walnut, sesame, or a blend)
1-2 Tb Acid (Good aged balsamic, wine vinegar, citrus juice)
1 tsp dijon mustard
Dash of salt, grind of pepper, a few chopped herbs if desired (oregano and thyme are great in a lemon-olive one for real Greek-style)
Whip it together with a fork until it emulsifies

for 1000 Island Dressing in a bind.
Mix together to taste:
  • Mayo
  • Ketchup
  • Sweet pickle relish
Great on a cobb salad, or on a homemade Big Mac burger.

I simply mixed an X-infused Balsamic Vinegar with an X-infused Olive Oil where X = a wide variety of things (Pomegranate, Blood-Orange, Garlic, etc.).
The flavor-infused products are all I need for some variety and sure beat the pre-mixed store varieties that add a lot of corn syrup or other sugars along with salt/sodium, etc.

1/4 cup Balsamic vinegar
1/4 cup Water
1/4 cup Tahini
1 tablespoon maple syrup
1 tablespoon lemon juice
1 teaspoon minced garlic
1 teaspoon chopped parsley (bottled is fine too)
dash of salt

Blend it up. This is my "go to" salad dressing.

I’ve been tinkering with a mixture of ponzu sauce and sesame oil. I’ll figure it out eventually.

4 oz malt vinegar
2 oz extra virgin olive oil
2 oz lemon or lime juice
mix and shake bottle before using

I love it.

So I went to the store and, Oh My, they only had apple cider vinegar in plastic bottles. Apple cider vinegar in a glass bottle has been my go-to since I first shopped for myself. Don’t ask me why, I just liked the apple cider idea I guess.

So out of desperation or exasperation I settled for Balsamic vinegar, in a (fancy) glass bottle, and Wada Wadazooo!!!, the stuff is good!

Let me tell you, It has given me a new meaning to oil and vinegar!

I usually just use a mix of high quality extra virgin olive oil and balsamic vinegar (with a ratio of maybe 5:3), and some black pepper.

Wow, too bad about the plastic bottle. Try looking for an organic version, with the "mother." If you find that, it'll probably still be in glass.

Glad you finally found the Balsamic, though! It's definitely a staple of mine, and the better ones are usually aged longer and are often a bit thicker and even more flavorful.

My tastes change as I tire of my usual dressing. Lately, the go-to dressing has been:

2 parts EVOO
1 part Balsamic vinegar
1 part apple cider vinegar (with the "mother") (largely to conserve the Balsamic :) )
1 big squeeze of lemon
fresh-ground black pepper
various fresh herbs: maybe fresh minced rosemary, or fresh basil, or oregano, or sage, or thyme
dried herbs if I don't have any fresh herbs left

I just pour these directly onto the salad and toss.

Another thing I like to do is include an avocado with every salad. I kind of cube it first, and when I toss it in with the salad for a while, the ripe avocado adds a creamy texture to the dressing. :thumbsup :thumbsup
