This is what is available. I did not include bonds because I do not want any (28M)
If it's a Fidelity managed plan you should investigate if your company allows you to setup a "Brokerage Link" account. That will be self-directed and give you a lot more choices. Your plan administrator will know. You can also ask them if there are any Brokerage Link investment limitations, assuming it's available.

I don't see any option on the website to do this nor on our benefits guide

Even when BrokerageLink is available it is often hidden and has special process to enable it for your account.
Give a call to the 401k support group and ask if it is available and if so, how to enable it.

Mark
The advantage of Get Rich Slow is that you actually Get Rich.
I'd start with the fees. I've had garbage 401k plans and have literally sorted from low fee to high and chosen the lowest fee regardless of what it is. I do NOT roll other 401k's into a garbage 401k. They all go to my IRA.

I’m surprised you have an index fund for every category but large cap. Did you miss a fund?
Do you have the fund fees handy you could add?
If this is the whole list, I’d do fsmdx and fsggx myself.
I do not have the fund fees handy. I see that the top 2 are large cap?
Click the links for those two and let us know what the expense ratios are? Don't need to investigate the fees for any other funds, as you already have excellent choices for Midcap and International categories
If they are any greater than 0.1%, I would echo @the_wiki and choose FSMDX for domestic stocks and FSGGX for international stocks and call it a day.
