I would back up even further and as a first step establish what the gap is between her income and living expenses in retirement. Her total living expenses in retirement would be $2500 per month. And I actually made a mistake, she will be able to receive $2750 per month in social security at age 65....

We don't do things this way. We direct a portion of each paycheck to savings right off the top, and bank all bonuses. Then we live on the rest. This method is very simple, and fair, IMO. If your mother has significant assets in both tax deferred and taxable account it might be better to use a three fund portfolio of total stock and total bond and place less tax efficient investment(bonds) in the IRA. At your tax bracket you are borderline roth/traditional and your 401ks have very few decent options. So, I recommend using a blend of the 401ks and roths.
