True, but the barrier islands make MS a lot different than the panhandle. Just made one: parmesan (real stuff), parsley, green onion, sautéed mushrooms, a bit soft in the middle after folding. Use butter, not oil.

I like cast iron for a lot of stuff but it's not optimal for omelets, hard to keep at an angle at the end (too heavy), it holds too much heat and it's easy to overcook the eggs.
We did the southern Utah trip after dropping our daughter off at college last September. The weather was fantastic, but i would say eastern ( Moab ) seemed a lot hotter than the west side of Utah.
