We are trying to pay cash more often at (locally owned)restaurants so the merchant doesn't have to pay the fee and the waitstaff can receive cash tips.
Cash can facilitate the age-old tradition of tax evasion at restaurants, especially if the sale is not tendered into a register that tracks sales amounts and the waitstaff so that their annual earnings statement reflects the assumed 15% tips. Of course, it depends on the restaurant...

Cannot speak to TX, but I do know a gap in coverage(especially a couple years) will count against you when you go to start a new policy. Might not double the premium, but it will be significant.
